Healthy Protein Nacho’s

Ingredients: (makes 6 servings)

  • 1 large packet of Tostitos tortilla Chips (any flavour)
  • 500g lean beef mince
  • 3 Handfuls of diced vegetables (Onion, sweet corn, carrot, tomato, capsicum)
  • 1 can of black beans
  • 1 Old El Paso Mexican Taco mix sachet
  • ½ of lime
  • 250g of grated cheddar cheese lightProtein, healthy nachos, clean eating, yum, weight loss, recipe

Additional Extra’s

  • Add our healthy guacamole
  • Add sour cream

Method:

Prepare the fry pan with olive oil cook and stir the ground beef over medium-high heat, breaking the meat up as it cooks, until the meat is no longer pink and has started to brown, about 10 minutes.

 

While the meat is cooking you should have put your beans in a pot to boil and cook.

 

Now add and stir in the diced vegetables and taco mix powder to the meat and cook for about 5 more minutes. 

 

Grab your tortilla chips and place on a large plate and place in the oven for 4 minutes – just so they crispy up.

 

Drain your beans, pull the chips out of the oven and place your beans on top then the cooked meat finishing off the nachos with some grated cheese and squeezing the lime all over the top

 

*** You might want to leave some tortilla chips out of the oven for you have to extra’s for when you start eating.

 

 

Per serving, no extra’s.
